Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Peanut Butter
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Honey
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ginger Powder
  • 1 cup Coconut Milk
  • 1 tablespoon Lime Juice
  • 1 tablespoon Vegetable Oil
  • 1 cup Chopped Peanuts for garnish
  • 2 tablespoon Chopped Cilantro for garnish

Instructions 

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 7-10 minutes.
  3. In a mixing bowl, combine peanut butter, soy sauce, honey, garlic powder, ginger powder, coconut milk, and lime juice. Mix well.
  4. Pour the peanut sauce over the chicken in the skillet. Stir to coat the chicken evenly.
  5. Simmer for 5-7 minutes until the sauce thickens slightly.
  6. Serve the Thai Peanut Chicken over rice or noodles, garnished with chopped peanuts and cilantro.
