Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Tomatoes, diced
  • 1.5 cups Arborio Rice
  • 3 cups Chicken Broth
  • 1 teaspoon Saffron
  • 1 cup Peas
  • 1 lb Shrimp, peeled and deveined
  • 1 lb Mussels, cleaned
  • 1 tablespoon Paprika
  • to taste Salt and Pepper
  • 1 lemon Lemon, cut into wedges

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and garlic, cook until softened.
  3. Stir in diced tomatoes and cook for a few minutes.
  4. Add Arborio rice, stir to coat with the tomato mixture.
  5. Pour in chicken broth and saffron, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Add peas, shrimp, and mussels, cook until seafood is done.
  8. Season with paprika, salt, and pepper.
  9. Garnish with lemon wedges before serving.
