Main Ingredients
- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Tomatoes, diced
- 1.5 cups Arborio Rice
- 3 cups Chicken Broth
- 1 teaspoon Saffron
- 1 cup Peas
- 1 lb Shrimp, peeled and deveined
- 1 lb Mussels, cleaned
- 1 tablespoon Paprika
- to taste Salt and Pepper
- 1 lemon Lemon, cut into wedges
Heat olive oil in a large pan over medium heat.
Add chopped onion and garlic, cook until softened.
Stir in diced tomatoes and cook for a few minutes.
Add Arborio rice, stir to coat with the tomato mixture.
Pour in chicken broth and saffron, bring to a boil.
Reduce heat, cover, and simmer for 20 minutes.
Add peas, shrimp, and mussels, cook until seafood is done.
Season with paprika, salt, and pepper.
Garnish with lemon wedges before serving.
