Ingredients

  • 2 cups Zucchini, grated
  • ½ cup All-purpose flour
  • 1 large Egg
  • ¼ cup Green onions, chopped
  • ¼ cup Parmesan cheese, grated
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine grated zucchini, flour, egg, green onions, Parmesan cheese, salt, and black pepper. Mix well.
  3. Heat olive oil in a frying pan over medium heat.
  4. Scoop about 2 tablespoons of the mixture and flatten it into a patty. Place it in the hot pan.
  5. Cook for 2-3 minutes on each side or until golden brown and crispy.
  6. Remove from the pan and drain on paper towels. Serve warm.
