Main Ingredients
- 2 cups Zucchini, grated
- ½ cup All-purpose flour
- 1 large Egg
- ¼ cup Green onions, chopped
- ¼ cup Parmesan cheese, grated
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
In a mixing bowl, combine grated zucchini, flour, egg, green onions, Parmesan cheese, salt, and black pepper. Mix well.
Heat olive oil in a frying pan over medium heat.
Scoop about 2 tablespoons of the mixture and flatten it into a patty. Place it in the hot pan.
Cook for 2-3 minutes on each side or until golden brown and crispy.
Remove from the pan and drain on paper towels. Serve warm.
