  • 4 cups yellow squash, sliced
  • 1 cup onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • ½ cup melted butter
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil the sliced squash and chopped onion until tender. Drain well.
  3. In a mixing bowl, combine the cooked squash and onion, shredded cheddar cheese, sour cream, salt, and pepper. Mix well.
  4. Pour the mixture into a baking dish. Top with crushed crackers and drizzle with melted butter.
  5. Bake in the preheated oven for about 30 minutes, or until the top is golden brown.
