Ingredients

  • 200 g vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup bean sprouts
  • ¼ cup chopped fresh herbs (mint, cilantro, basil)
  • ¼ cup crushed peanuts
  • 2 tablespoon soy sauce
  • 2 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 clove garlic, minced

Instructions 

  1. 1. Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the noodles, shredded carrots, cucumber, bean sprouts, and fresh herbs.
  3. 3. In a small bowl, whisk together the soy sauce, lime juice, fish sauce, sugar, and minced garlic.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve in bowls, topped with crushed peanuts.
