  • ¼ cup Chopped Onions
  • ¼ cup Chopped Tomatoes
  • ¼ cup Spinach
  • ¼ cup Shredded Cheese
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Beat the eggs in a mixing bowl.
  2. 2. Heat olive oil in a frying pan over medium heat.
  3. 3. Add chopped bell peppers, onions, tomatoes, and spinach to the pan. Cook until softened.
  4. 4. Pour the beaten eggs over the veggies. Cook until the eggs start to set.
