Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook until softened.
Add carrots, celery, and zucchini. Cook for 5-7 minutes.
Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste. Stir in spinach and cook until wilted.
