Ingredients 

Main Ingredients

  • 4 large russet potatoes
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped green onions

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce each potato several times with a fork.
  3. Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender.
  4. Remove the potatoes from the oven and let them cool for a few minutes.
  5. Cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving a small border of potato intact.
  6. Mix the potato flesh with sour cream, milk, butter, salt, and pepper until smooth.
  7. Spoon the mixture back into the potato skins. Top with shredded cheese, bacon, and green onions.
  8. Return the potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
