Main Ingredients
- 2 cups cucumbers, thinly sliced
- ¼ cup red onion, thinly sliced
- ¼ cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped fresh mint
In a mixing bowl, combine cucumbers and red onion.
In a small bowl, whisk together rice vinegar, sugar, and salt until sugar is dissolved.
Pour the dressing over the cucumber mixture and toss to coat.
Sprinkle with chopped cilantro and mint before serving.
