Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lb chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 cups mushrooms, sliced
  • 2 tablespoon lime juice
  • 1 cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  2. Add the red curry paste and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add the coconut milk, fish sauce, and brown sugar. Stir well.
  5. Add the chicken, bell pepper, carrot, and mushrooms. Simmer until the chicken is cooked through, about 5-7 minutes.
  6. Stir in the lime juice and garnish with cilantro before serving.
