- 2 cups black-eyed peas, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- ½ cup diced red onion
- ½ cup diced green bell pepper
- ¼ cup chopped cilantro
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon salt
- ½ teaspoon black pepper
In a large mixing bowl, combine black-eyed peas, corn, tomatoes, red onion, green bell pepper, and cilantro.
In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
Pour the dressing over the vegetable mixture and toss to coat evenly.
Refrigerate for at least 1 hour before serving to allow flavors to meld.
