Main Ingredients
- 500 g Chicken Breast cut into bite-sized pieces
- 1 cup Bell Peppers chopped
- 1 cup Pineapple Chunks canned or fresh
- ½ cup Onion chopped
Sauce Ingredients
- ½ cup Ketchup
- ¼ cup Rice Vinegar
- ¼ cup Soy Sauce
- ¼ cup Brown Sugar
- 1 tablespoon Cornstarch mixed with 2 tablespoon water
1. In a bowl, mix together ketchup, rice vinegar, soy sauce, brown sugar, and cornstarch slurry. Set aside.
2. Heat oil in a wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
3. In the same wok, add bell peppers, pineapple chunks, and onion. Stir-fry for 3-4 minutes.
4. Return chicken to the wok. Pour in the sauce and stir until everything is well coated and the sauce thickens.
5. Serve hot over rice.
