Ingredients

  • 4 ears corn, husked fresh
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh basil, chopped
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Bring a large pot of water to a boil. Add corn and cook for 3-5 minutes until tender. Remove and let cool.
  2. 2. Cut the corn kernels off the cob and place them in a large bowl.
  3. 3. Add cherry tomatoes, cucumber, red onion, and basil to the bowl.
  4. 4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate until ready to serve.
