Spinach and Potato Frittata

Main Ingredients
- 2 cups Spinach fresh
- 2 medium Potatoes peeled and diced
- 6 Eggs
- ½ cup Milk
- ½ cup Cheddar cheese shredded
- 1 tablespoon Olive oil
- to taste Salt
- to taste Black pepper
Preheat your oven to 375°F (190°C).
In an oven-safe skillet, heat olive oil over medium heat. Add diced potatoes and cook until tender, about 10 minutes.
Add spinach to the skillet and cook until wilted, about 2 minutes.
In a mixing bowl, whisk together eggs, milk, salt, and black pepper. Pour the mixture over the potatoes and spinach in the skillet.
Sprinkle shredded cheddar cheese on top.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set and the top is golden brown.
Remove from the oven and let cool slightly before slicing and serving.
