Spicy Potatoes and Scrambled Eggs

- 2 medium potatoes diced
- 4 eggs beaten
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon salt divided
- ½ teaspoon black pepper
- ¼ cup milk
1. Heat the olive oil in a frying pan over medium heat.
2. Add the diced potatoes and cook until golden brown and crispy, about 10-15 minutes.
3. Sprinkle the chili powder, half the salt, and black pepper over the potatoes. Stir to combine.
4. In a bowl, beat the eggs with the milk and remaining salt.
5. Push the potatoes to one side of the pan and pour the egg mixture into the other side.
6. Scramble the eggs until cooked through, then mix with the potatoes.
7. Serve hot and enjoy!
