Pretzel Dough
- 4 cups all-purpose flour
- 1 packet active dry yeast
- 1 ½ cups warm water
- 1 tablespoon sugar
- 2 teaspoon salt
- ¼ cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- to taste coarse salt
In a large bowl, dissolve the yeast in warm water. Add sugar and salt, and stir until dissolved. Add flour and knead until smooth and elastic.
Let the dough rise for about 1 hour or until doubled in size.
Preheat your oven to 450°F (230°C). In a large pot, bring water and baking soda to a boil.
Divide the dough into 8 pieces. Roll each piece into a rope and shape into a pretzel.
Dip each pretzel into the boiling water for about 30 seconds. Place on a baking sheet lined with parchment paper.
Brush each pretzel with the beaten egg yolk mixture and sprinkle with coarse salt.
Bake for 12-15 minutes or until golden brown.
