  • 6 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions 

  1. 1. Add potatoes, onion, and chicken broth to the slow cooker.
  2. 2. Cook on low for 6 hours or until potatoes are tender.
  3. 3. Use an immersion blender to blend the soup to your desired consistency.
  4. 4. Stir in heavy cream, cheddar cheese, salt, and pepper. Cook for an additional 15 minutes.
  5. 5. Serve hot, garnished with extra cheese or chives if desired.
