Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 1 can Tomato Sauce (15 oz)
  • 2 cans Kidney Beans, drained and rinsed (15 oz each)
  • 2 cans Black Beans, drained and rinsed (15 oz each)
  • 1 cup Corn Kernels
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. 2. Transfer the sautéed onion and garlic to the slow cooker.
  3. 3. Add diced tomatoes, tomato sauce, kidney beans, black beans, corn, chili powder, ground cumin, paprika, salt, and black pepper to the slow cooker. Stir to combine.
  4. 4. Cover and cook on low for 8 hours or on high for 4 hours.
  5. 5. Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, or chopped cilantro.
