Salmon Burgers with Lemon Basil Mayo

Salmon Burgers
- 1 lb salmon fillet skinless, chopped
- ¼ cup breadcrumbs
- 1 egg beaten
- 2 tablespoon mayonnaise
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
Lemon Basil Mayo
- ½ cup mayonnaise
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon basil chopped
1. Preheat your grill to medium-high heat.
2. In a mixing bowl, combine the chopped salmon, breadcrumbs, beaten egg, 2 tablespoon mayonnaise, 1 tablespoon lemon juice, salt, and black pepper. Mix well.
3. Form the mixture into 4 patties.
4. Grill the patties for about 4-5 minutes on each side, until fully cooked.
5. In a small bowl, mix together ½ cup mayonnaise, 1 tablespoon lemon juice, and chopped basil to make the lemon basil mayo.
6. Serve the salmon burgers on buns with a generous dollop of lemon basil mayo on top.
