- 1 cup Dried Red Beans soaked overnight
- 1 cup Rice
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 medium Green Bell Pepper chopped
- 1 stalk Celery chopped
- 1 teaspoon Thyme dried
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 4 cups Water
1. Rinse and drain the soaked red beans.
2. In a large pot, sauté the chopped onion, garlic, green bell pepper, and celery until soft.
3. Add the red beans, water, thyme, paprika, salt, and black pepper to the pot. Bring to a boil.
4. Reduce heat and simmer for about 45 minutes, or until beans are tender.
5. Cook the rice according to package instructions.
6. Serve the red beans over the cooked rice.
