Main Ingredients
- 1 unit Eggplant sliced
- 1 unit Zucchini sliced
- 1 unit Yellow Squash sliced
- 1 unit Red Bell Pepper sliced
- 1 unit Yellow Bell Pepper sliced
- 2 cloves Garlic minced
- 1 unit Onion chopped
- 2 tablespoon Olive Oil
- 1 can Diced Tomatoes
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Basil
- to taste Salt and Pepper
1. Heat olive oil in a large skillet over medium heat.
2. Add garlic and onion, sauté until softened.
3. Add eggplant, zucchini, yellow squash, and bell peppers. Cook until tender.
4. Stir in diced tomatoes, thyme, basil, salt, and pepper. Simmer for 20 minutes.
5. Serve hot.
