Ingredients 

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper or to taste

Instructions 

  1. 1. Turn on the pressure cooker and select the sauté function. Add a bit of oil and brown the beef stew meat in batches. Remove and set aside.
  2. 2. Add the chopped onion and garlic to the pressure cooker. Sauté until softened.
  3. 3. Stir in the tomato paste, thyme, and rosemary. Cook for another minute.
  4. 4. Return the beef to the pot. Add the beef broth, carrots, potatoes, salt, and pepper. Stir to combine.
  5. 5. Close the lid and set the pressure cooker to high pressure for 35 minutes.
  6. 6. Once the cooking time is up, let the pressure release naturally for 10 minutes, then do a quick release.
  7. 7. Open the lid and give the stew a good stir. Adjust seasoning if needed. Serve hot.
