  • 4 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a pot, combine potatoes, onion, and chicken broth. Bring to a boil.
  2. 2. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return soup to pot, stir in heavy cream, and season with salt and pepper.
  5. 5. Heat through and serve hot.
