Potato Leek Soup

Main Ingredients
- 4 cups Potatoes, peeled and diced
- 2 cups Leeks, cleaned and sliced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 2 tablespoon Butter
- to taste Salt and pepper
1. In a large pot, melt the butter over medium heat.
2. Add the leeks and cook until soft, about 5 minutes.
3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Puree the soup using a blender until smooth.
5. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
6. Heat through and serve warm.
