  • 4 cups Potatoes, peeled and diced
  • 2 cups Leeks, cleaned and sliced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the leeks and cook until soft, about 5 minutes.
  3. 3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Puree the soup using a blender until smooth.
  5. 5. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
  6. 6. Heat through and serve warm.
