Ingredients 

Main Ingredients

  • 3 pounds Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine
  • 4 cloves Garlic minced
  • 1 large Onion sliced
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 275°F (135°C).
  2. Season the chuck roast with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add the onions and garlic, cooking until softened.
  5. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  6. Return the roast to the pot, add the beef broth, carrots, and potatoes.
  7. Cover and cook in the preheated oven for about 4 hours, or until the meat is tender.
  8. Remove from oven and let rest for a few minutes before serving.
