Ingredients

  • 4 medium beets trimmed and washed
  • 1 cup vinegar white or apple cider
  • ½ cup water
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon peppercorns

Instructions 

  1. 1. Boil the beets in a saucepan until tender, about 30 minutes. Drain and cool.
  2. 2. Peel and slice the beets.
  3. 3. In a separate saucepan, combine vinegar, water, sugar, salt, mustard seeds, and peppercorns. Bring to a boil.
  4. 4. Pack beets into jars and pour the hot vinegar mixture over them. Seal and refrigerate.
