  • 1 ¼ cups water
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Cook the pearl couscous in water according to package instructions. Let it cool.
  2. In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine.
