Pearl Couscous Salad Recipe

Main Ingredients
- 1 cup pearl couscous
- 1 ¼ cups water
- ½ cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion, finely chopped
- ¼ cup feta cheese, crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Cook the pearl couscous in water according to package instructions. Let it cool.
In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine.
