Ingredients 

Pie Crust

  • 2 cups All-purpose flour
  • 1 cup Unsalted butter cold, cut into cubes
  • ¼ cup Ice water

Filling

  • 6 cups Peaches peeled and sliced
  • 1 cup Granulated sugar
  • ¼ cup Brown sugar
  • ¼ cup All-purpose flour
  • 1 teaspoon Ground cinnamon
  • ¼ teaspoon Ground nutmeg
  • 1 tablespoon Lemon juice
  • 1 Egg wash 1 egg beaten with 1 tablespoon water

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour and butter for the crust. Add ice water and mix until dough forms. Divide dough in half, shape into disks, and refrigerate for 30 minutes.
  3. Roll out one disk of dough and place in a pie dish. In another bowl, mix peaches, sugars, flour, cinnamon, nutmeg, and lemon juice. Pour filling into the crust.
  4. Roll out the second disk of dough and place over the filling. Trim and crimp edges. Brush with egg wash.
  5. Bake for 45-50 minutes or until crust is golden brown. Cool before serving.
