Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 can cannellini beans (15 oz, drained and rinsed)
  • 1 cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • ¼ cup grated Parmesan cheese for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add the diced tomatoes and chicken broth. Bring to a boil.
  3. Stir in the cannellini beans, ditalini pasta, oregano, and basil. Reduce heat and simmer until the pasta is tender, about 10-12 minutes.
  4. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.
