Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 Egg beaten
  • ¼ cup Vegetable oil
  • 1 cup Blueberries fresh or frozen

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, combine the oats and milk. Let them soak for 10 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the beaten egg and vegetable oil to the soaked oats and milk mixture. Mix well.
  5. Combine the wet and dry ingredients, stirring until just combined. Do not overmix.
  6. Gently fold in the blueberries.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
