Ingredients 

Main Ingredients

  • 1 cup Arborio Rice
  • 2 tablespoon Olive Oil
  • 1 cup Chopped Onions
  • 2 cups Sliced Mushrooms
  • 4 cups Chicken Broth Keep warm
  • ½ cup Grated Parmesan Cheese
  • 2 tablespoon Butter
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pan over medium heat. Add the onions and cook until translucent.
  2. Add the mushrooms and cook until they release their moisture and become tender.
  3. Add the Arborio rice and stir to coat with the oil. Cook for 1-2 minutes.
  4. Begin adding the warm chicken broth one ladle at a time, stirring constantly. Wait until the liquid is mostly absorbed before adding more.
  5. Continue this process until the rice is creamy and cooked through, about 18-20 minutes.
  6. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
