Main Ingredients
- 2 tablespoon Butter
- 1 Onion, chopped
- 2 Carrots, diced
- 2 cloves Garlic, minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 cup Red Lentils
- 4 cups Chicken Broth
- 1 Apple, peeled and diced
- 1 cup Coconut Milk
- to taste Salt and Pepper
- 2 tablespoon Chopped Fresh Cilantro for garnish
Melt butter in a large pot over medium heat. Add onions and carrots, cook until softened.
Add garlic, curry powder, cumin, and coriander. Cook for another minute.
Add lentils, chicken broth, and apple. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in coconut milk and season with salt and pepper. Simmer for another 5 minutes.
Serve hot, garnished with chopped cilantro.
