Mofongo Recipe
A traditional Puerto Rican dish made with fried plantains, garlic, and pork cracklings.

Main Ingredients
- 4 large green plantains peeled and cut into 1-inch slices
- ½ cup pork cracklings
- 4 cloves garlic minced
- ¼ cup olive oil
- to taste salt
- to taste pepper
Heat the olive oil in a frying pan over medium heat.
Fry the plantain slices until golden brown, about 5-7 minutes per side. Remove and drain on paper towels.
In a mortar and pestle, mash the garlic and pork cracklings together.
Add the fried plantains to the mortar and mash until well combined. Season with salt and pepper to taste.
Shape the mixture into balls or serve as is. Enjoy!
