Mexican Shrimp Cocktail Recipe

Main Ingredients
- 1 lb Shrimp, cooked and peeled
- 1 cup Tomato juice
- ½ cup Ketchup
- ¼ cup Lime juice, freshly squeezed
- 1 Jalapeño, finely chopped
- ½ cup Red onion, finely chopped
- ½ cup Cilantro, chopped
- 1 Avocado, diced
- to taste Salt
- to taste Pepper
1. In a large mixing bowl, combine the tomato juice, ketchup, and lime juice.
2. Add the chopped jalapeño, red onion, and cilantro. Mix well.
3. Gently fold in the shrimp and diced avocado.
4. Season with salt and pepper to taste.
5. Chill in the refrigerator for at least 30 minutes before serving.
