  • 2 cups Heavy cream not ultra-pasteurized
  • 1 tablespoon Lemon juice

Instructions 

  1. 1. In a heavy-bottomed saucepan, heat the cream over medium heat until it reaches 190°F (88°C), stirring occasionally.
  2. 2. Add the lemon juice and continue to heat, stirring gently, until the cream thickens and coats the back of a spoon.
  3. 3. Remove from heat and let cool for about 20 minutes.
  4. 4. Line a strainer with cheesecloth and place it over a bowl. Pour the mixture into the strainer and let it drain in the refrigerator for 8-12 hours.
  5. 5. Transfer the mascarpone to an airtight container and store in the refrigerator for up to a week.
