Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 carrots Carrots chopped
- 1 stalk Celery chopped
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
1. Heat a large pot over medium heat. Add a splash of oil and sauté the onions, garlic, carrots, and celery until softened.
2. Add the lentils, vegetable broth, cumin, and paprika. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the lentils are tender.
3. Season with salt and pepper to taste. Serve hot.
