Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 carrots Carrots chopped
  • 1 stalk Celery chopped
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil and sauté the onions, garlic, carrots, and celery until softened.
  2. 2. Add the lentils, vegetable broth, cumin, and paprika. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the lentils are tender.
  3. 3. Season with salt and pepper to taste. Serve hot.
