Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.
Pour in chicken broth and bring to a boil.
Add orzo pasta and cook until al dente, about 8-10 minutes.
Stir in shredded chicken and lemon juice. Season with salt and pepper to taste.
Simmer for another 5 minutes to heat through.
Garnish with fresh parsley before serving.
