Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 lemon, juiced
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 2 tablespoon fresh parsley, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.
  3. Pour in chicken broth and bring to a boil.
  4. Add orzo pasta and cook until al dente, about 8-10 minutes.
  5. Stir in shredded chicken and lemon juice. Season with salt and pepper to taste.
  6. Simmer for another 5 minutes to heat through.
  7. Garnish with fresh parsley before serving.
