Leftover Chicken Croquettes
A great way to use up leftover chicken and make a tasty meal.

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 Egg beaten
- ¼ cup Chopped onion
- 1 tablespoon Chopped parsley
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
1. In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, chopped onion, parsley, salt, and pepper. Mix well until all ingredients are evenly distributed.
2. Shape the mixture into small patties or croquettes.
3. Heat the olive oil in a frying pan over medium heat.
4. Fry the croquettes in batches, cooking each side for about 3-4 minutes or until golden brown and crispy.
5. Remove from the pan and drain on paper towels. Serve hot.
