Instructions
Heat vegetable oil in a wok over medium-high heat.
Add garlic and cook until fragrant.
Add carrots and cook until tender.
Push vegetables to the side and pour beaten eggs into the wok. Scramble until cooked.
Add cooked rice, kimchi, and kimchi juice. Stir well.
Season with soy sauce, sesame oil, salt, and black pepper. Stir to combine.
Garnish with chopped green onions before serving.
