Instructions
Heat the vegetable oil in a wok over medium-high heat.
Add the minced garlic and stir-fry for about 30 seconds until fragrant.
Add the mixed vegetables and cook for 2-3 minutes until tender.
Push the vegetables to the side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Add the cooked rice to the wok and stir everything together.
Pour the soy sauce over the rice and mix well.
Season with salt and pepper to taste.
Garnish with chopped green onions before serving.
