  2. In a mixing bowl, toss the carrots with olive oil, honey, salt, and pepper until well coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
