Ingredients 

Main Ingredients

  • 1 lb ground beef
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. 2. Add the chopped onions and minced garlic to the pot. Cook until the onions are translucent.
  3. 3. Stir in the chopped carrots and celery. Cook for about 5 minutes.
  4. 4. Add the diced tomatoes (with juice), beef broth, frozen peas, and frozen corn. Bring to a boil.
  5. 5. Reduce heat and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  6. 6. Season with dried basil, dried oregano, salt, and pepper to taste. Serve hot.
