Ingredients

  • 1 large Zucchini cut into chunks
  • 1 large Red Bell Pepper cut into chunks
  • 1 large Yellow Bell Pepper cut into chunks
  • 1 large Red Onion cut into chunks
  • 8 oz Mushrooms whole or halved
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a large bowl, combine olive oil, salt, black pepper, garlic powder, and dried oregano.
  3. 3. Add the zucchini, bell peppers, red onion, and mushrooms to the bowl and toss to coat.
  4. 4. Thread the vegetables onto skewers.
  5. 5. Grill the skewers for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. 6. Serve immediately.
