Ingredients 

Main Ingredients

  • 1 cup Orzo uncooked
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ½ cup Kalamata Olives pitted and sliced
  • ½ cup Feta Cheese crumbled
  • ¼ cup Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
