- 4 large eggs
- ¼ cup diced tomatoes
- ¼ cup diced onions
- ¼ cup diced green bell pepper
- ¼ cup crumbled feta cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Beat the eggs in a bowl.
Heat olive oil in a pan over medium heat.
Add onions and bell pepper, cook until soft.
Pour in the eggs, cook until almost set.
Add tomatoes and feta cheese.
Fold the omelet and cook for another minute.
Season with salt and pepper.
