- 3 lbs Eye of Round Roast trimmed
- 2 teaspoon Salt
- 1 teaspoon Black Pepper freshly ground
- 1 tablespoon Olive Oil
- 3 cloves Garlic minced
Preheat your oven to 375°F (190°C).
Rub the roast with olive oil, then season with salt, pepper, and minced garlic.
Place the roast in a roasting pan and put it in the oven.
Roast for about 1 hour and 30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Remove from the oven and let it rest for 15 minutes before slicing.
