Main Ingredients
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 head escarole, chopped
- 2 cans cannellini beans, drained and rinsed
- 4 cups chicken or vegetable broth
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the minced garlic and sauté until fragrant, about 1 minute.
Add the chopped escarole and cook until wilted, about 5 minutes.
Add the cannellini beans and broth. Bring to a simmer and cook for 10-15 minutes.
Season with salt and pepper to taste. Serve hot.
