Main Ingredients
- 500 g Cooked chicken, shredded
- 200 ml Mayonnaise
- 100 ml Greek yogurt
- 2 tablespoon Curry powder
- 1 tablespoon Tomato paste
- 1 tablespoon Lemon juice
- 50 g Dried apricots, chopped
- 50 g Sultanas
- to taste Salt and pepper
1. In a saucepan, heat the curry powder for a minute to release its aroma.
2. In a mixing bowl, combine the mayonnaise, Greek yogurt, tomato paste, lemon juice, and curry powder.
3. Add the shredded chicken, dried apricots, and sultanas. Mix well.
4. Season with salt and pepper to taste.
5. Serve chilled, either as a sandwich filling or over a salad.
