  • 1 package cornbread mix
  • 1 can pinto beans drained and rinsed
  • 1 can corn drained
  • 1 cup chopped tomatoes
  • 1 cup chopped green bell pepper
  • 1 cup chopped red onion
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 packet ranch dressing mix
  • ¼ cup chopped fresh cilantro

Instructions 

  1. Prepare cornbread according to package instructions. Let cool, then crumble.
  2. In a large bowl, combine crumbled cornbread, pinto beans, corn, tomatoes, green bell pepper, red onion, and cheddar cheese.
  3. In a separate bowl, mix mayonnaise, sour cream, and ranch dressing mix until well combined.
  4. Pour dressing over the cornbread mixture and toss to coat.
  5. Garnish with chopped cilantro. Serve immediately or refrigerate until ready to serve.
