Corn in a Cup

Main Ingredients
- 4 cups Corn kernels fresh or frozen
- 1 cup Mayonnaise
- 1 cup Cotija cheese crumbled
- 1 teaspoon Chili powder
- 1 tablespoon Lime juice freshly squeezed
- to taste Salt
1. Boil the corn kernels in a pot of water for about 5-7 minutes until tender. Drain and set aside.
2. In a mixing bowl, combine the mayonnaise, cotija cheese, chili powder, lime juice, and salt.
3. Add the cooked corn to the mixture and stir well to combine.
4. Serve the corn mixture in cups and enjoy!
